Most
of the food gets wasted without following the proper process of preservation.
Presently, scientists have developed some of the modern equipments using freezedrying technologies which are able to preserve the food for a long time.
This
process is something different from other procedures. It remains the
consistency, shape, color and intense flavor of the original products. As this
procedure use a little amount of heat, the minerals and vitamins of the
products preserved.
When
the time come for consuming, just only adding water can return their original
shape when they are freshly harvested. With the contact of the moisture, these
products get their original character, flavor and color.
The freeze
dryer keeps the original structure of the products same as before only
it removes water from them. Before going through the freeze drying procedure,
the weight of the raw materials generally known as fresh weight. When the water
removes from the products, their weight goes down and they become lighter even
in some products, they come down 10 times lower than their original one! After
the output, when the products contact to water, they absorb it and get their
original shape back which is known as the instant character.
Mainly
freeze dryer works in three steps to get the desire result. These are Freezing,
Drying and Dehydration.
Process
starts with freezing the products to lower temperature such as -18 degree C to
-20 degree C. This is the main step to follow for keeping the same structure of
the products as it was harvested. This step won’t let to loss the nutritional
value of any food.
After
that second step starts which extracts the water from the raw material. To
perform this action, frozen materials are kept into the vacuum chamber. When
the products placed under low pressure, the remaining water removed in steam
form which is popularly known as “sublimation”. To perform this process, heat
is needed which can be obtained from different devices. The vacuum chamber and
the condenser are attached and kept under the vacuum in order to transfer water
molecules to directly vapor to the condenser where it deposited as ice form.
After
removing water from the products, they still contain a little amount in them
which has a negative effective on its life and quality. So after placing under
vacuum, the products have to go through another drying process and this is the
last where products get completely dried.
